Stuffed Jalapeños

STUFFED JALAPEÑO CHILES
I modified this internet recipe sligthtly

9-12 large, raw jalapeños
1 (6 1/2 oz.) can albacore or crab meat
1/2 c. (more or less) mayonnaise
1Tbsp sour cream
1tsp cilantro, minced
1tsp green onion, minced
4 to 6 oz. grated cheddar cheese
Paprika

Rinse jalapenos. Slice lengthwise and remove seeds/membrane.
Mix tuna (or crab), mayonnaise, sour cream, cheese, green onion and cilantro.

Stuff peppers with mixture.

Sprinkle with paprika. Chill.

Bake at 350 for 10-15 minutes (depending on how crisp you want them) and remove. Turn broiler on high. Broil until tops are bubbly and brown

I have a question...
Those look great but how do you pick the chilies that don't burn the hell out of your mouth. I want the kind that TGI Fridays gets.

Mello: If you take out the seeds and the whitish membrane, they're just like bell peppers. Really!
